The influence of water activity on the enantioselectivity in the enzyme- catalyzed reduction of 2-pentanone
The stereoselective reduction of 2-pentanone by alcohol dehydrogenase from Thermoanaerobium brockii was studied at controlled water activity and at different reaction temperatures. The reaction rate increased when water activity was increased from 0.32 to 0.96 and when raising the temperature from 5°C to 40°C.
