Emulsification and adsorption properties of hydrophobically modified potato and barley starch
In this paper, we studied the adsorption at emulsion droplets of potato starch, which was hydrophobically modified with octenyl succinate anhydride (OSA), a surface active macromolecule containing ultrahigh molar mass components.
